A fabulous dessert recipe that adds a wonderful touch of elegance and flavor to any special occasion and is fairly easy to prepare with a few ingredients only.This is one of my favorite dessert recipes and I am happy to share it with all of you.
Ingredients:
- 250g shredded coconut
- 400g sugar (I use 300g)
- 3/4 cup of water
- 4 whole eggs
- 4 egg yolks
- In a saucepan combine the water and sugar.
- Bring to a boil and then simmer for 3 minutes on low heat.
- Turn off and add the shredded coconut.
- Let cool and add the whole eggs and egg yolks.
- Mix well.
- Grease a bundt cake pan with butter and sugar.
- Pour the pudding mixture into the pan. Bake in a water bath at 180 degrees for about 45 minutes or until you noticed it is cooked.
- To bake in a water bath put a larger pan in the oven with hot water and place the pudding pan inside.
- When the pudding is cooked allow to cool within the tray with water. When the water cools off the pudding is ready to be refrigerated.
